BBQ Pulled Pork Sweet Potato Hash

1 cup BBQ pulled pork

1 cup cooked, chopped sweet potatoes

2 cups spinach

3 eggs

4 tablespoons of feta

Dash of crushed red pepper


  1. In a large pan, add a tablespoon of olive oil and spinach, cook on medium high for about 7 minutes or until sautéed
  2. On top of the spinach, add pulled pork and sweet potatoes and cook and then crack all 3 eggs over the mix
  3. Cook for about 10 minutes or until eggs are completely white
  4. Sprinkle on feta and pepper
  5. Enjoy
