Sweet Potato Waffle Breakfast Sandwich

 Very exciting! I bought a waffle maker and here is my first creation – a sweet potato waffle egg sandwich! I cannot believe how quick and easy it was to make these waffles. 5 minutes!!!!

Ingredients: 

2 sweet potatoes, grated

2 egg

Handful of spinach

Dash of salt, pepper and organic paprika

1/3 of an avocado

Extra Virgin Olive Oil

Directions:

  1. Combine grated sweet potato, 1 egg, salt, pepper and paprika
  2. Spray waffle maker with a nonstick spray 
  3. Add sweet potato mix to waffle maker and let cook for 4-5 minutes
  4. Meanwhile, add a teaspoon of olive oil to a frying pan and set to high
  5. Add egg to pan and fry egg for about 7 minutes
  6. Sautee spinach in a pan with a teaspoon of olive oil on medium high for about 5 minutes
  7. Carefully remove waffle from maker, let cool and then cut the waffle in half
  8. Place one piece on a plate, add spinach, then egg, a few pieces of avocado and finally top with the other piece of waffle – enjoy!
