Healthy Egg Breakfast Taco

I have been trying to take less vitamins and get all the essentials from actual food. Eggs, avocado and spinach have too many vitamins to even list.  I’ve also been upping my healthy fats (trying to snack less and healthy fats are a great way to stay fuller longer) and the eggs, avocado and olive oil do the trick! Recipe below serves 2.


2 small gluten free taco shells – these are my favorite

2 cups spinach

4 tablespoons of goat cheese

2 eggs

2 tablespoons of cilantro

1/2 avocado

2 tables spoons of olive oil

  1. Set oven to high add a tablespoon of olive oil and crack eggs on your pan and fry eggs for about 7 minutes
  2. Set another burner to medium high and add spinach and tablespoon of olive oil to another pan for about 5 minutes
  3. Lay shells flat on a plate and add equal parts of spinach to both shells, followed by the egg, avocado, cilantro and goat cheese
