Barbecue Chicken Skewers

Skewers are one of my favorite summertime dinners. They are quick, healthy and so versatile. Skewers or kabobs are perfect for families with picky eaters or dietary restrictions since you can make each skewer specially for whoever is eating it.

Ingredients:

1 pound boneless chicken breast, chopped into ice cube sized pieces

1 cup gluten free BBQ sauce

1 red pepper, slices into triangles

1 green pepper, slices into triangles

1 yellow pepper, slices into triangles

1 red onion, cut into triangles

1 large carton of mushrooms

1 bag of miniature red bliss potatoes

12 skewer sticks

Directions:

  1. Marinate chicken in barbecue sauce prior to cooking for about 2 hours using 1/3 cup of BBQ sauce
  2. Heat grill to 350 degrees and wait until it reaches temperature
  3. Meanwhile, start adding chicken, peppers, onion, mushroom and potatoes in any order you’d like – try to get at least 3 chickens on each skewer
  4. Drizzle loaded skewers with more BBQ sauce
  5. Cook skewers on grille for about 12 minutes, rotating them about every 3 minutes
  6. If you’d like, add additional sauce while cooking (the sauce turns a little bit more watery while cooking, which helps to cover all of the skewers)
  7. Check to make sure the chicken is cooked before removing
  8. Let cool, remove the chicken and veggies and enjoy!
