Sweet Potato BBQ Chicken Boats

This sweet and savory dish will hit the spot! The combination of sweet potato and BBQ sauce is a summer must try. The recipe below serves 2.


2 large sweet potatoes

1 pound of shredded chicken

4 tbs goat cheese

1/4 cup of my all-time favorite BBQ sauce

4 tbs celery

1/2 cup sautéed mushrooms

2 tsp Extra Virgin Olive Oil


  1. Bake sweet potatoes in the oven at 400 degrees for 45 minutes
  2. Meanwhile, cook chicken and tsp of olive oil on the stove on medium high until cooked
  3. In another pan, add mushrooms on the stove at medium-high with a teaspoon of olive oil for 15 minutes
  4. Once chicken is cooled, pull chicken apart into shreds and place in a bowl, then add BBQ sauce and mix
  5. Scoop and remove 75% of sweet potato into another bowl
  6. In a separate bowl, mix BBQ sauce and chicken
  7. Spinkle on goat cheese and celery
  8. You can take the scooped potato and serve it on the side (try adding cinnamon)
  9. Enjoy!!
