I love my toast with peanut butter, yogurt, fruit, etc., don’t get me wrong but I was really was craving some extra protein the other day for breakfast. I took a look in the fridge and found cottage cheese and prosciutto I had leftover from my meat board. I wasn’t certain how it would turn out but, let me tell you – I will be making this again! This would even make a tasty appetizer or side dish.
Spouted grain bread
Cottage cheese, I used Friendship Dairy Cottage Cheese, Lowfat
- Broil bread in the over for 2 minutes on each side.
- Spread cottage cheese over broiled slices
- Roll a half piece of prosciutto and place on top of the cottage cheese and enjoy!
