I have been experimenting with making alternative gluten free pizza crusts. Well, I found you don’t have to make at all! A gluten free taco shell! There are a lot of gluten free taco shells out there that taste pretty bad so make sure you find a good tasting brand before you go ahead and make your pizza.
2 gluten free taco shell, I used these Gluten Free Taco Shells
6.5oz. pesto sauce, I used 365 Everyday Value Basil Pesto, 6.5 oz
1-2 cup Vegan Mozzarella (of whichever cheese is your favorite)
1/2 of an avocado
2 cups of your choice of meat (I used 1 cup of salmon and 1 cup of chicken)
- Set oven to 425 degrees and bake shells for 5 minutes in a greased cookie tray
- Remove from the oven and add pesto (about 3.5 each) to both shells, followed by the cheese (just over a half cup each)
- Scatter the meat and avocados on top of the cheese
- Place back into the over from another 10 minutes
- Let cool and enjoy!
