Sweet Potato Toast

Sweet potato toast is incredibly versatile and a great alternative to your regular breakfast

toast. I like to buy small sweet potatoes so that I can have a variety of slices with different fruits and flavors. I bake the potatoes in the oven on 400 degrees for about 45 minutes and let them cool before I add the toppings.

Slice #1 has a scoop of almond butter, banana slices and sprinkles of nuts, chia and flax

Slice #2 has a scoop of greek yogurt, strawberry slices, sprinkles of nuts, chia and flax

Slice #3 has a scoop of almond butter, blueberries and sprinkles of nuts, chia, flax and shredded coconut
