My parents are visiting for the weekend and I wanted have something light yet filling for their arrival after driving in the car for 5 hours. Well, I think I nailed it!
Ingredients:
Sweet Potato Hash
2 large sweet potatoes
1/4 cup almond flower
2 eggs
Bake
1/2 cup of your favorite BBQ sauce
1.5 pounds of chicken
1/2 sharp cheddar cheese
1/3 cup chopped celery
1/3 cup chopped bacon
Directions:
- Starting with the sweet potato hash, you are going to want to take your sweet potatoes and boil until soft (~15 minutes)
- Meanwhile, set your oven too 400 degrees
- Once cooled off, cut up sweet potatoes and add to a food processor, along with the eggs and almond flower
- Add mix to a casserole dish and bake for 25 minutes
- Remove from the over and add a layer of BBQ sauce on top of the sweet potato mix, followed by chicken and then another layer of BBQ sauce
- You can then sprinkle the cheese, bacon and celery on the top layer
- Bake for another 10 minutes
- While still warm, make your tacos and enjoy!
