BBQ Chicken & Sweet Potato Tacos

My parents are visiting for the weekend and I wanted have something light yet filling for their arrival after driving in the car for 5 hours. Well, I think I nailed it!

Ingredients: 

Sweet Potato Hash

2 large sweet potatoes

1/4 cup almond flower

2 eggs

Bake

1/2 cup of your favorite BBQ sauce

1.5 pounds of chicken

1/2 sharp cheddar cheese

1/3 cup chopped celery

1/3 cup chopped bacon

Directions: 

  1. Starting with the sweet potato hash, you are going to want to take your sweet potatoes and boil until soft (~15 minutes)
  2. Meanwhile, set your oven too 400 degrees
  3. Once cooled off, cut up sweet potatoes and add to a food processor, along with the eggs and almond flower
  4. Add mix to a casserole dish and bake for 25 minutes
  5. Remove from the over and add a layer of BBQ sauce on top of the sweet potato mix, followed by chicken and then another layer of BBQ sauce
  6. You can then sprinkle the cheese, bacon and celery on the top layer
  7. Bake for another 10 minutes
  8. While still warm, make your tacos and enjoy!
