Zucchini Banana Bread


This bread tastes more like a dessert, in the best way possible! I even served it with vanilla ice cream.


1/3 cup coconut oil

1/2 cup agave syrup

2 eggs

1/2 cup almond milk

1 teaspoon baking soda

1 teaspoon ground cinnamon

2 teaspoons vanilla extract

1/2 teaspoon sea salt

2 cups grated zucchini (1 small-large zucchini)

1 ¾ cups almond flower

1/4 cup  peanuts


  1. Preheat oven to 325°F.
  2. Grease a 9” x 5” loaf pan
  3. Combine the coconut oil, eggs and agave in a large bowl
  4. Add the milk, baking soda, cinnamon, vanilla, salt and mix
  5. Add zucchini, flour, nuts and mix again
  6. Pour the mix into your greased loaf pan
  7. Bake for 50 minutes and let cool – I also added crumbled peanuts on top
  8. Enjoy!
