Grilled Summer Salmon

IMG_9287Perfect summer lunch! Grilled salmon with feta, sautéed squash and spiced tomatoes. I love this dish because it incorporates healthy fat but still leaves you feeling light after you eat! (Serves 2)

Ingredients: 

1 lb of salmon

4 tbs of feta

2 roma tomatoes

2 yellow squash

4 tbs cilantro for taste

2 lime wedges for taste

Dash of salt and pepper

1 tbs of oilve oil

Directions:

  1. Bring grill to 350 degrees
  2. Once at 350, add salmon and grill on each side for 3 minutes (add a dash of salt and pepper)
  3. Add feta to the hot salmon and let it melt for a few minutes while you finish up the sides
  4. Meanwhile, sauté the squash on the stove on medium high for 10 minutes using the olive oil (add a dash of salt and pepper)
  5. Chop the tomato
  6. Spinkle cilantro over the plate and enjoy!
