Buffalo Chicken Zucchini Boats



  • 2 large zucchinis
  • 1-1/2 organic chicken breast chopped
  • 1/2 cup Franks Red Hot Sauce
  • 2 tbsp Hellman’s Avocado Mayo
  • Dash of garlic powder, salt, pepper
  • 4 tbs crumbled feta cheese
  • 1/2 sliced avocado
  • Cilantro, chopped
  • Primal Kitchen Avocado Oil Ranch


  1. Preheat the oven to 350
  2. Cut tips off ends of zucchinis and then in half, & spoon-remove the middle of the zucchini out
  3. Add 1/2 water to baking dish, add zucchini, cover with foil
  4. Bake for 20 minutes
  5. Meanwhile, mix hot sauce, avocado mayo, and spies
  6. Combine mixed sauce and chopped chicken
  7. Add chicken mixture to the boats
  8. Bake for another 15 minutes
  9. Add feta and broil for 5 minutes
  10. Add avocado slices, drizzled ranch and chopped cilantro. Enjoy!
