Absolutely perfect for a hot summer night. This is great if you are looking for a quick meal after work that includes protein, fat and veggies!
1 lb of shrimp
1 large avocado
1 container of red cherry tomatoes
1 container of yellow cherry tomatoes
1 can of medium black olives
Drizzle red wine vinegar over the salad and add salt and pepper
- Sauté shrimp in olive oil for 10 minutes on medium high – add dash of salt and pepper
- Chop up tomatoes and avocados
- Add tomatoes, olives, avocado and shrimp into a large bowl
- Drizzle red wine vinegar over the top of the salad and enjoy!
