Shrimp Salad

IMG_8671Absolutely perfect for a hot summer night. This is great if you are looking for a quick meal after work that includes protein, fat and veggies! 

Ingredients

1 lb of shrimp

1 large avocado

1 container of red cherry tomatoes

1 container of yellow cherry tomatoes

1 can of medium black olives

Drizzle red wine vinegar over the salad and add salt and pepper

Directions

  1. Sauté shrimp in olive oil for 10 minutes on medium high – add dash of salt and pepper
  2. Chop up tomatoes and avocados
  3. Add tomatoes, olives, avocado and shrimp into a large bowl
  4. Drizzle red wine vinegar over the top of the salad and enjoy!IMG_8672
