I said the sautéed mushrooms were the easiest side dish the other day – but I lied! This is! I was in a scramble the other day to put something healthy together before for the beach and wah-la!
1 can of medium black olives
2 large tomatoes
1 large avocado
Dash of salt & pepper
- Slice avocado into squares
- Chop tomatoes into fairly large chunks
- Add drained olives, sliced avocados and tomatoes into a bowl
- Add salt and pepper as desired
Note: You can also add some balsamic vinegar for an additional dressing but the avocado and tomatoes create a nice dressing all on their own.
