Tomato, Avocado, Olive Salad


I said the sautéed mushrooms were the easiest side dish the other day – but I lied! This is! I was in a scramble the other day to put something healthy together before for the beach and wah-la!


1 can of medium black olives

2 large tomatoes

1 large avocado

Dash of salt & pepper


  1. Slice avocado into squares
  2. Chop tomatoes into fairly large chunks
  3. Add drained olives, sliced avocados and tomatoes into a bowl
  4. Add salt and pepper as desired

Note: You can also add some balsamic vinegar for an additional dressing but the avocado and tomatoes create a nice dressing all on their own.
