Ground Turkey Stuffed Peppers with Spinach and Sun Dried Tomatoes


Easy peasy! So much flavor and you can switch up the ingredients to whatever you choose. Serves 2-4.


1 lb of turkey

2 cups of spinach

3 peppers, halved

1/2 c sun dried tomatoes

2 tbs olive oil

2 minced garlic cloves

dash of salt and pepper


  1. Preheat the oven at 350 degrees
  2. On medium heat, sauté spinach in a pan with olive oil, garlic, salt, pepper, sun dried tomatoes and ground turkey for about 7 minutes (note, the turkey will still be pink)
  3. Meanwhile, cut peppers in half and get rid of any of the seeds
  4. Scoop the mix from the pan into the peppers
  5. Coat pan with olive oil and place peppers on the pan and bake for 30 minutes
