Colorful & fun! You cant go wrong with eggs and who doesn’t love sweet potatoes? The exciting part is you can add any of your favorite vegetables. I wanted to make this extra nutritious and colorful so I added tons of my favorite veggies! Serves 4.
2 large sweet potatoes
3 minced garlic gloves
1/4 cup onions
1/2 cup red bell pepper
1/2 cup yellow bell pepper
Dash of salt, pepper, cayenne pepper
2 tables spoons extra virgin olive oil
- Slice your sweet potato into cubes (I microwaved for 3 minutes because my potatoes were too hard) and place into the pan with the olive oil on medium high.
- Let that cook for 10 minutes and begin to chop all your veggies.
- After you have let the sweet potato cook for 10 minutes add all of the veggies and spices. Let that cook for another 5 minutes.
- Crack your eggs over the hash and let the eggs cook until they turn white and enjoy!
